Kankun stir fry

KANKUN STIR FRY

Empty the content of the packet in to a preparation bowl. Re hydrate by immersing in cold water for 30 minutes to one hour. Drain and keep aside.
Add 2 Tablespoon of Coconut oil in a cooking pan, heat on medium heat and then add

  • ½ a Teaspoon of Mustard seeds and when splatter
  • 1 Small Onion – chopped
  • 2 Garlic cloves – chopped
  • 6 Curry leaves
  • 2 pieces of Rampah leaves
  • 1 Teaspoon of Chilli flakes
  • ½ a Teaspoon of Turmeric powder
  • salt to taste
  • 1 Tomato cut in to 8 (optional)

Mix well and cook for 2 minutes. Add the Pre prepared Kankun, mix and stir-fry for 5 minutes. Switch of the heat. Add 1/4 of a lemon.
Enjoy with warm cooked rice.
