Fried bitter gourd with tomato & onion salad

FRIED BITTER GOURD WITH TOMATO & ONION SALAD

Empty the content of the packet in to a preparation bowl. Add 1 teaspoon of Salt and 2 cups of cold water. Re hydrate for at least 30 minutes to 1 hour. for optimum results soak for 3 hours. Drain and squeeze the water out. Leave on a Kitchen towel to absorb the retaining water.
Mean time sliced

  • 2 Red Onions
  • 2 Tomatoes
  • 2 green Chilies and then add
  • ½ a teaspoon of Salt or to taste
  • 1 teaspoon of Black Pepper powder
  • 1/2 of a Lemon Juice
  • 1 table spoon of Maldives fish (optional, vegetarians can avoid) Mix well and leave aside.

When ready to serve heat some coconut oil on medium heat, fry the bitter gourd and mix with the salad.
