KITUL TREACLE (“Kithul Pani”)
Kithul Tree is a native flowering palm that grows naturally in the Sri Lankan tropical rain forest. It is scientifically known as Caryota urens. Kithul treacle is made from the sweet fluid (sap) extracted from the kithul flower when it is the right time for tapping and reducing the sap. Collected sap is gradually evaporated with the help of wood fire to produce a pure, unrefined and delicious kithul treacle. This process ads up a unique smoky taste in to the treacle. Whole process is done by traditional kithul tapping families who has the much-guarded secret knowledge passed on to them over generations.
