KITUL JAGGERY (“Kithul Hakuru”)

Kithul Tree is a native flowering palm that grows naturally in the Sri Lankan tropical rain forest. It is scientifically known as Caryota urens. Kithul Jaggery is made from Kithul treacle, the sweet fluid (sap) extracted from the kithul flower when it is the right time for tapping and reducing the sap. Collected sap is gradually evaporated with the help of wood fire to produce a pure, unrefined and delicious kithul treacle. This process ads up a unique smoky taste in to the treacle. Whole process is done by traditional kithul tapping families who has the much-guarded secret knowledge passed on to them over generations.

Kitul Jaggery (“Kithul Hakuru”) is made by further condensation of Kitul Treacle in a shallow clay pot on medium heat, once it starts boiling let it simmer for some time under continues stirring. Then the condensed honey is traditionally pored in to coconut shells (or any other type of a mould) so that it will take the shape of it and set. This unique traditional product is a healthy alternative for refined sugar.
